GF Thai Chicken Wraps

The other night we delivered a meal to a family who just welcomed their baby boy! They keep a Gluten Free diet, so I got to learn a new recipe that was gluten free. It was so delicious (I made my family the same thing) - I just had to make it again this week and share! Now the only ingredients that are GF are the tortillas and soy sauce in the Thai Chicken Wraps. If you aren't gluten free, just use regular soy sauce and tortillas. I love how fresh this meal is and the peanut sauce is simple and delicious!

My son has only two days of Preschool left and we are sad. But I will be sharing a fun idea for the Last Day of School in my next post. Good thing we have swim lessons, music camp, and soccer starting up to keep us busy. Now if only it would stop snowing here in Colorado... we could actually look forward to Summer!

Thai Chicken Wraps

Peanut Sauce:
- 1/4 cup peanut butter, creamy
- 1/4 cup sugar
- 3 tbsp. GF soy sauce
- 2 tbsp. water
- 2 tbsp. vegetable oil
- 1 tsp. garlic, minced

1. Combine all peanut sauce ingredients in a small saucepan on medium heat. Heat until sugar has dissolved.

Chicken Wraps:
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 lb. chicken tenderloins
- 1 bag of broccoli slaw
- 1/2 red onion, sliced
- 1 tsp. grated fresh ginger
- 1 tbsp. cooking oil
- 6-8 GF tortillas

1. Heat oil in a large pan. Place chicken in a bowl and toss with salt and pepper. Cook and stir chicken until done.
2. Remove chicken and add broccoli slaw, onion, and ginger. Cook 2-3 minutes until vegetables are crisp.
3. To make wraps place chicken in a tortilla and top with broccoli slaw mixture and peanut sauce.
