Flourless Brownies with PB2

Now I have been dying to bake something with PB2 (powdered peanut butter). Other than sprinkling it in a smoothie or on yogurt, I was at a loss as what else I could do with this cool stuff. So I found a recipe for Flourless Brownies with PB2 - they are even gluten free for those who are GF! These brownies are super gooey, moist, and have a nice hint of peanut butter. You would never think they didn't have flour in them. I am a fan and can't wait for my husband to try them out!

Flourless Brownies with PB2

Ingredients

- 1 egg
- 1 egg white
- 1 cup PB2
- 1/2 cup cocoa powder (I used dark)
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup raw honey
- 1 cup water plus 1 tbsp.
- 1 tsp. vanilla
- 3/4 cup chocolate chips

1. Spray a small baking dish with cooking spray.
2. In a small bowl, whisk the egg and egg white together.
3. In a large bowl, mix the PB2, salt, baking soda, and cocoa powder together.
4. Add the eggs to the mixture and combine.
5. Add honey, water, and vanilla.
6. Fold in the chocolate chips and pour into baking dish.
7. Bake at 325 degrees for 30 minutes. Allow to cool before cutting.
