Chocolate Chip Cookies... with Cream Cheese!

This weekend I am leaving my dudes to attend my sweet cousin's baby shower in Texas. Naturally, I have been baking and cooking so they don't starve while I am gone! I made a nice lasagna for them to eat and pasta... but if all else fails, there is a frozen pizza in the freezer! My husband's favorite cookie is a chocolate chip cookie, so I some that have cream cheese in the recipe. They are really soft and fluffy when you bite into them - it's hard to just eat one. Hopefully the cookies last through the weekend!

Chocolate Chip Cookies with Cream Cheese (makes 2 dozen)

Ingredients:

- 1/2 cup unsalted butter, softened
- 1/4 cup cream cheese (not light or whipped)
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 large egg
- 2 tsp. vanilla extract
- 2 1/4 cup flour (plus 2 tbsp. at high altitude)
- 2 tsp. cornstarch
- pinch of salt
- 2 1/4 cups semi-sweet chocolate chips

1. Cream butter, cream cheese, and sugars together until smooth. Add egg and vanilla and mix on medium-high until mixture is light and fluffy (about 5 minutes).
2. Mix four, cornstarch, and salt together in a separate bowl. Add to butter mixture until combined.
3. Add chocolate chips until incorporated throughout the dough.
4. Using a cookie scoop, scoop batter onto a greased baking sheet or parchment paper-lined baking sheet.
5. Bake at 350 for 8-10 minutes (mine took 8 minutes).
