Chicken and Spinach Pasta Bake

I haven't made a casserole type meal in a while, and this was easy and super delicious! What an easy meal! I also made a side of cornbread to go with it.

Chicken and Spinach Pasta Bake

- 8 oz. rigatoni, cooked according to package
- 3 cups of cooked chicken, cubed
- 1 tbsp. olive oil
- 1 cup onion, diced
- 1 can Italian style diced tomatoes
- 1 10 oz. package of frozen chopped spinach, thawed
- 8 oz. chive and onion cream cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 cups mozzarella cheese

1. Preheat oven to 350 degrees. Place olive oil and onions in a large baking dish and bake for 15 minutes.
2. While the onions are baking, combine chicken, diced tomatoes, spinach, cream cheese, salt, pepper together in a large bowl.
3. Add onions to mixture.
4. Add noodles to casserole dish, and place chicken mixture on top.
5. Sprinkle cheese on top of everything.
6. Bake covered for 30 minutes. Bake additional 10 minutes uncovered or until casserole bubbles.
