Spring is around the corner and so is Easter! So I thought I would begin my "blog" with come simple sugar cookies decorated with royal icing. I used two cookie cutters I got from JoAnn fabrics that were a bunny head and carrot. It was fun for my 2 year old and I to roll out the dough and bake together before we welcome his little brother. Later I mixed up some royal icing and used my own creative imagination to color and decorate my cookies. Enjoy!

Hoppy Easter!
Simple Sugar Cookie Recipe (I halved this original recipe so I didn't end up with 4 dozen cookies!)
Ingredients:
1 1/4 c. butter (room temperature)
1 c. sugar
1 egg
1 1/2 tsp. vanilla
2 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1. Preheat oven to 350 degrees. Using a mixer, cream together the butter and sugar. Slowly add egg and vanilla.
2. Mix flour, baking powder, and salt together in a separate bowl.
3. Slowly add flour mixture to sugar mixture. Mix until well blended.
4. Place dough in plastic wrap and place in the fridge for at least 1 hour.
5. Roll out dough and use desired cookie cutters. Place cookies on baking sheet.
*6. I like to bake my cookies on Parchment cookies to get an even heat and prevent my cookies from sticking to the baking sheet.
7. Bake cookies 7-10 min.
Royal Icing
Ingredients:
2 c. powdered sugar
1 1/2 tablespoons meringue powder
1/4 c. warm water
1. Mix powdered sugar and meringue powder together.
2. Add warm water and mix everything to where it is wet with a spoon.
3. Using a hand mixer on "high," beat frosting until stiff and white (about 5-10 min).
4. Use desired colors/piping bags to color frosting and make designs.
