Baked Donuts

When I am stressed I like to workout... when I'm super stressed I like to bake... and then give away what I baked so I don't eat everything I made! Well I have had this "Baked Donut" recipe on my mind lately and the blogger who posted it, even included a nifty link that prints the recipe out for you! I made the dough after dinner this evening and let it rise in my oven while I gave the boys a bath and put them to bed. I just finished making them and demolished 2 donuts and a donut hole! What a delicious dessert! I really think you should try out this recipe, it is definitely a keeper and I look forward to making them again... very soon!

Baked Donuts

*Makes about 15 donuts and donut holes

Dough Ingredients

- 3/4 cups warm milk
- 1 packet Active Dry Yeast
- 1 tbsp. unsalted butter, softened
- 1/3 cup sugar
- 1 egg
- 2 1/2 cup all-purpose flour (plus 2 1/2 tbsp. flour at high altitudes like Colorado)
- pinch of nutmeg
- 1/2 tsp. salt

Glaze Ingredients

- 1/4 cup milk
- 1 tsp. vanilla extract
- 2 cups confectioners sugar
*sprinkles optional

Baked Donuts:

1. Place 1/4 cups warm milk in the bowl of your Kitchenaide mixer. Sprinkle the yeast over the milk and let sit for 5 minutes.
2. In a small bowl, combine the remaining 1/2 cup milk, butter and sugar. Add it to the yeast mixture and stir to combine.
3. Add the egg and stir.
4. Add flour, nutmeg, and salt. Stir until the dough begins to form.
5. Change the beater to the dough hook and knead the dough until smooth. Add more flour to dough if it is too sticky.
6. Transfer dough to a lightly floured surface and knead for 5 minutes. Place in a large lightly greased bowl and cover tightly with plastic wrap. Place in a warm place for an hour, or until dough has doubled in size.
7. Roll dough out on a lightly floured surface until 1/2 inch thick. Cut out the donuts using a donut cutter, or 2 biscuit cutters.
8. Place donuts on a baking sheet lined with parchment paper. Place a clean towel over them and let sit for 45 min.
9. Preheat oven to 375 degrees. Bake donuts for about 6-8 min. I baked mine for 6 minutes and they turned out perfect!
10. Top with glaze!

Glaze:

1. In a small saucepan, warm the vanilla and milk. Slowly whisk in the confectioners sugar.
2. Remove from heat and dip your donuts halfway into the glaze.
3. Place on a cooling rack set over a baking sheet.
4. Top with sprinkles if desired. Let stand for 10 min.
